Moroccan Beef Stew

So this one was quick and easy and considering how busy I’ve been lately, that was exactly what we needed. This Moroccan Beef Stew was from the Gourmet Garden/4 Ingredients cookbook, and it was DELICIOUS! So I had a late shift on Tuesday and Yoga in the morning, so not much time to stuff around, which means it’s a slow cooker day!

First throw in some crushed or diced tomatoes. These were on special a while back, so I still have a few in the pantry that need using up.

Then, and now, this is the meal maker: The Gourmet Garden Moroccan Spice Mix, soooooooooooooooo tasty. Looks wrong, but trust me: TASTY!

And now half a kilo of diced beef, and because we’re slow cooking today you can use mean as cheap as you like, cos it’s going to be all melty and delicious after a few hours in the pot. Throw in some diced vegies, I’ve used potato and pumpkin here, and give it a good stir. If I had more time there would have been carrots in there as well.

WP_20140121_003WP_20140121_005WP_20140121_006 So it’s cooked after 4 hours on high, or 6 hours on low, but I made it at 9am and hubby got home and ate it at about 6pm, so it got 9 hours in the cooker and then deliciousness!

I had it the following day with minty peas, that was deliciousness as well ^_^
