Zucchini Fritters

I had another late shift, and being almost winter I can’t resist any opportunity to have a hot breakfast. I had a funny weekend for food because I was so busy so I figured I’d try something especially healthy, and this is pretty much all vegies, so definitely healthy. It also gave me a chance to use my grater which sits there unused most of the time. I still have another zucchini in the fridge so there’s a good chance I’ll do another batch, keep them in the fridge and reheat them on days when I start earlier, because hot breakfasts on cool mornings are winning.

So, grab a grater and put a carrot, a zucchini and half a red onion through it.


Whisk up 2 or 3 eggs in a bowl then throw all the vegies in and stir it all together. I found it was better with a bit of salt and pepper.

Then into a pan! I used a little pan, because the big one had just been cleaned and it didn’t want to grub it up again just for breakfast.

It was good to control the size of the fritters too, and here’s the first one that didn’t get scoffed soon as it got out of the pan.


And then there was a delicious stack! I think they’ll be nice with some chutney. Maybe some sour cream…
